This one's got both mushrooms and spinach, the excess moisture of which is often difficult to cook off. Consequently, my tofu ended up a but wet and mushy. Also, this recipe's funny for the reason that it doesn't include lots of the tofu scramble staples, namely tumeric, soy sauce/tamari, and extra spices to season. There's just a tablespoon of nooch (rather low, imho), papika, salt, and pepper. Yawn.
